So much fun (with quinoa)

I’ve been so busy!

Guess what? I’m getting a puppy.

Yes, a little itty bitty huggable, lovable puppy. A mutt. We’re going to name him Zeus.

SO MUCH EXCITEMENT.

I can only play so much with my brat of a cat. (13 years old and she’s not as spunky anymore.)

I had a very exciting weekend with my best friend Cassie (: We played video games, stayed up late watching netflix, and played frisbee with other friends. ❤

Also, we made a quinoa recipe!! Are y’all ready?

Quinoa Salad

  • 1C uncooked quinoa
  • 2 C water
  • 1/4 tsp salt
  • 1/4 C chopped onion
  • 1/2 green pepper
  • 1/4 C chopped tomato
  • 1/4 C basil
  • 1/2 C almonds
  • 1/4 C dried cranberries
Boil water, throw in quinoa, lower to medium heat and cook for 10-15 min. (Until all water is absorbed.)
In the meantime make the dressing.
  • 2 tbsp lemon juice,
  • 1/4 C olive oil
  • some lemon pepper (to taste)
Mix together and throw into your mix once it’s all cooked. Either eat warm (like we did) or refrigerate until ready!

We didn’t use tomatoes this time because Cassie is doing this weird diet thing for a few weeks (for health reasons) and she can’t eat tomatoes. STOOPID. It was delicious anyways!

Tropical Trip*

  • 1 C coconut milk
  • 1/2 C chopped pineapple
  • 1 banana
  • 1 medium/large orange
  • 1/4 C greek yogurt
  • 1 scoop vanilla protein powder
Blend, baby, blend.
I truly loved this smoothie. A lot.

Day Eight & Nine: Duel Wield

Hello bloggies! I am extremely tired because it is so late so I am going to post some shorts updates, thoughts, and pictures (;

Oats and smoothies. Definition of me.

So remember last week when I said I consulted my wise mind and said I wasn’t ready for a tattoo? Well I think I changed my mind. I want to get a small one the size of a quarter on my ankle. I’ve gotten the “it’s permanent FOREVER AND EVER” lecture from my mom and my friend, Fodes, but I really want one. I feel like this is a meaningful tattoo and something I will always appreciate. Also, I don’t think that it will affect any job prospects in the future or interfere with anything.

Thursday. I think Adam & Cassie are going with me.

Speaking of Cassie I spent the last two days with her, and they were ahhhhmazing. She is truly my best friend. We spend “obnoxiously long periods of time together” (Cassie) and never get sick of each other. It’s great. I feel so good after I’ve been with her and she brings me back down to earth when I need it most.

DUAL WIELD OATMEAL STYLE.

We watched No Strings Attached, played Nintendo GameCube, went to our friend’s grad party, made banana bread, and made plans to make a music video. Yes, we’re awesome. [speaking of banana bread, check out that recipe tomorrow when I’m not too tired to tell you about it!]

Tomorrow’s Agenda: breakfast, church, gym, home, play pokemon, father’s day celebration, Adam comes over, study for bio, sleep. Oh & possibly make a new bracelet. My arm is slowly being covered and I love it.

Day Three: Twisted.

Guess what happened guys. I twisted my ankle yesterday.  So sad 😦

It’s feeling a little better today, but I am now limping everywhere. I feel like a kicked puppy. It happened when I was playing some intense ultimate frisbee yesterday with my friends. Fun, but painful and hard. Great exercise though (;

Today I went to church. I went to Catholic mass all year at school and my senior year of high school so attending non-denominational services is definitely a different experience! It’s still a little out of my comfort zone, but I love the atmosphere. There’s so much love for God and Jesus. The pastor has powerful sermons. Love.

It’s one of my obsessions. I wrote my college admissions essay on one of the books. (Yup, it means that much to me.)

Favorite secret of the week:

I am super lucky to have the parents that I do. They are always there for me, every day, every minute, every moment of my life. I know I will always have a home wherever they are.

Last night was a hard night. I’m not sure why, but after one or two good weeks, I always have a bad night. It’s probably how everybody feels right? It’s normal, I think. Luckily I had one of my best friends, Emma, reach out to me last night to make me feel better. I don’t know if she realizes what a difference she made last night. She stopped the demons from getting to my soul and she stopped the thoughts from coming. For that I don’t know if I can thank her enough.

Today is going to be a better day. I am obviously not going to exercise because of my ankle, but I am just having a lazy day. Aren’t those the best? After I finish this post I’m going to curl up in my bed and watch True Blood. We are cooking salmon on the grill today. Unfortunately it’s only in the mid-60s today, but at least it’s not raining! (;

Sammi got her new camera today. Me = super mega uber jealous! She is so creative. I can’t wait to see what kinds of  beautiful pictures she takes!

For some reason I was obsessed with the chocolate strawberry smoothie I made yesterday.

Chocolate-Covered Strawberry Smoothie

  • 1/4 C Almond Milk
  • 3 Tbsp cocoa powder
  • 1 scoop Choc protein powder
  • 1 C frozen strawberries
  • 2 heaping scoops plain chobani yogurt
  • shredded coconut to top
  • spinach = optional (I didn’t have any)
Blend, baby, blend.
