Chocolate Peanut Butter Muffins

Hi bloggies! (: I’m sorry I’m not posting as often. It’s so hard in summer because I’m so busy. I’m busy at school too. I guess I’m always busy. Just a forewarning, I probably won’t post daily. I’ll post as much as I can though (:

I had my first biology test yesterday, and I think it went well! Hoorah!

So if you stalk me on twitter (which of course you all should) you may have noticed I made a recipe last week. What?! Yes, I made a recipe. Amazing? Probably not to the experienced foodies, but my mom was pretty impressed. (; I made it using my lovely peanut flour that I won from Cait at http://beyondbananas.wordpress.com/!

They were a complete success.

[Chocolate Peanut Butter Muffins]*

Yields 12 medium muffins. About 1 hour time including baking. Preheat oven 400F. Contains eggs & dairy.

You will have two batters that you will layer in the muffin pan(s).

1.) Peanut Batter

  • 1C peanut flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 C applesauce
  • 1/4 tsp salt
  • 1/2 C greek yogurt
  • 1/2 C white sugar
  • 1/8 C canola oil
Mix your dry & wet ingredients separately, then add the wet to the dry and stir. Be careful not to over mix!
2.) Chocolate
  • 1C flour
  • 1 1/2 tsp baking powder
  • 6 tbsp cocoa (depends how chocolately you want this part)
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 C applesauce
  • 1/4 tsp salt
  • 1/2 C greek yogurt
  • 1/2 C white sugar
  • 1/8 C canola oil
  • 1/4-1/2 C almond milk depending how dry your batter is
Mix your dry & wet ingredients separately, then add the wet to the dry and stir. Be careful not to over mix!

Now you will put either the peanut butter batter or the chocolate batter onto the bottom and the other on the top.

It’s up to you! I chose chocolate on bottom (:

Bake for 20 minutes. Ours only took 18min, yours might take 25. Just watch them (:

Chocolate sprinkles were added for flare (;

Onnom. We had a lot of chocolate so the peanut butter was slightly muted, but you still got the taste (; They were so … muffin-y!

There you have it! My first real recipe (: I thought a reeses cup might taste yummy in the middle of the two batters, but unfortunately I didn’t have any. If you make it I hope you enjoy! Please let me know how they turn out (;

Other eats:

Cassie’s mom made tilapia on top of pasta. The lemon juice squeezed on was perfect. So yummy.

This morning I didn’t have oatmeal… Woah. Hold the fudge. (actually don’t do that, keep eating it. and share. sharing is caring.) Yeah, I ate something else for breakfast. And no, it wasn’t a smoothie either.

I decided I’m pretty boring. So I had a different breakfast. Yup, I live on the wild side. Every once in awhile anyways.

Go lean Crisp avec almond milk. C’est parfait! Not a full meal thought soooo….

Deux scrambled oeufs! I’m not sure why they are pizza slice shape. They were going to just be a circle so I cut them. It didn’t work that well.


~Fitness!~

So I realized I never really talk about my workouts anymore. I do work out. Not as much as I used to, but I do. I want to do it more. I just can’t seem to find the motivation to run. Running bores me. It’s painful and I’m slow. So now I walk. All the benefits of getting my vitamin D outside and I’m not sitting on my butt. Win win.

Today I did 20min Zumba express, a 2 mile walk, and about 10-15min of dance.

Meh. Any exciting workout ideas for me? :/ Yesterday I went to the gym and did all the machines for 10-20 reps each. I also did 20min of yoga. Then I ate 3498123980248 calories. C’est la vie, I guess.
